Description

A warm and creamy Tuna-Broccoli Casserole that combines tender penne pasta, flaky tuna, and wholesome broccoli, all wrapped in a rich mushroom sauce and topped with a crunchy breadcrumb-almond crust. Perfect for cozy weeknight dinners or a crowd-pleasing dish at gatherings.

  • 1 1/3 cups uncooked penne pasta (4 oz)
  • 1 can (10 3/4 oz) condensed cream of mushroom soup
  • 1/4 cup milk
  • 1 pouch (7.06 oz) chunk albacore (white) or light tuna in water, drained
  • 1 jar (4.5 oz) sliced mushrooms, drained
  • 1 bag (12 oz) frozen broccoli cuts, thawed
  • 1 tablespoon butter or margarine, melted
  • 1/4 cup Progresso™ panko crispy bread crumbs
  • 1/4 cup slivered almonds

Instructions

  • Preheat oven to 350°F. Cook the penne pasta according to package instructions, using the minimum cooking time. Drain and set aside.
  • In a large bowl, mix the cream of mushroom soup, milk, tuna, and mushrooms. Add the cooked pasta and stir until well combined.
  • Spread the mixture evenly in an ungreased 1 1/2-quart casserole dish. Cover with aluminum foil and bake for 20 minutes.
  • Remove the casserole from the oven. Chop large pieces of broccoli into bite-sized chunks and stir them into the casserole mixture.
  • In a small bowl, mix the melted butter, panko breadcrumbs, and slivered almonds. Sprinkle this mixture evenly over the top of the casserole.
  • Return the casserole to the oven, uncovered, and bake for an additional 30 minutes or until bubbly around the edges and golden brown on top.
  • Allow the casserole to cool for 5 minutes before serving.

Notes

  • For extra creaminess, add 1/2 cup of shredded cheddar cheese to the casserole mixture before baking.
  • For a gluten-free version, use gluten-free pasta and breadcrumbs.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months.
