  • 4 sirloin steaks (about 1 1/4 pounds total, 3/4 inch thick)
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 2 teaspoons mesquite seasoning (e.g., McCormick’s Grill Mates Mesquite Seasoning)
  • Garlic Herb Butter:
    • 1/2 cup butter, softened
    • 1/2 teaspoon garlic powder
    • 1 teaspoon minced garlic
    • 1 tablespoon finely chopped fresh parsley
    • 2 teaspoons fresh thyme

Instructions

  • Prepare the garlic herb butter by mixing softened butter, garlic powder, minced garlic, parsley, and thyme in a bowl. Set aside.
  • Pat steaks dry with a paper towel to ensure a great sear.
  • Rub steaks with olive oil, then season with salt, pepper, and mesquite seasoning.
  • Cook steaks on a skillet or grill over medium heat for 5–8 minutes per side, or until the internal temperature reaches your desired doneness (135°F for medium-rare, 145°F for medium).
  • For oven cooking, sear the steaks in a hot cast-iron skillet for 1–2 minutes per side, then transfer to a preheated oven at 450°F and bake for 6–10 minutes.
  • Allow the cooked steaks to rest for at least 5 minutes.
  • Top each steak with garlic herb butter and serve immediately.

Notes

  • For best results, choose steaks that are at least 3/4 inch thick.
  • If you don’t have fresh herbs, substitute 1 teaspoon of Herbs de Provence or Italian seasoning.
  • To reheat leftovers, warm gently in a skillet over low heat with a splash of beef broth or water to retain moisture.
