  • ½ cup (8 tablespoons) unsalted butter, melted
  • 4 fat garlic cloves, grated
  • ½ cup Parmesan cheese, grated
  • ¼ cup flat-leaf parsley, chopped
  • ¼ teaspoon kosher salt
  • Freshly ground black pepper, to taste
  • 1 baguette or rustic crusty loaf
  • ½ pound fresh mozzarella, thinly sliced (optional)

Instructions

  • Preheat oven to 400°F (200°C).
  • In a small bowl, combine melted butter, grated garlic, Parmesan, parsley, salt, and black pepper. Stir until evenly mixed.
  • Using a serrated knife, cut deep slits into the bread, about 1 inch apart, without slicing all the way through.
  • Place the bread on a large sheet of foil. Generously spread the garlic butter mixture into each slit, ensuring full coverage.
  • Wrap the bread tightly in foil and place it on a baking sheet. Bake for 15 minutes.
  • If adding mozzarella, carefully unwrap the top of the foil. Gently open each slit and insert a slice of cheese. Bake uncovered for an additional 5–7 minutes, until the top is golden and the cheese is melted.
  • Slice or tear apart and serve immediately.

Notes

  • The garlic butter can be prepared up to 2 days in advance and stored in the refrigerator. Bring to room temperature before using.
  • For a lighter version, substitute olive oil for butter.
  • To make ahead, prepare the bread, wrap tightly, and refrigerate for up to 24 hours before baking.
