- 50g salted butter
- 2 tbsp plain flour
- 2 cups (500ml) milk

Instructions
- Cook macaroni in a large pan of boiling water according to packet instructions until al dente. Drain and set aside.
- Melt butter in a medium saucepan over medium heat. Add flour and stir for 1 minute until bubbling but not browned.
- Gradually whisk in the milk, starting with small amounts to ensure a smooth consistency. Bring to a gentle boil, then reduce heat and simmer for 2 minutes.
- Remove from heat and stir in grated cheese until melted and creamy. Season with salt and white pepper to taste.
- Combine the drained macaroni with the cheese sauce, stirring until well coated. Serve immediately, garnished with parsley.

- To reheat, add 1–2 tbsp of milk per cup of macaroni and warm over medium heat.
- For a baked version, transfer to an ovenproof dish, top with breadcrumbs, and bake at 180°C (350°F) for 15–20 minutes.
