For the Carrot Fries:

  • 2 carrots
  • 2 tablespoons olive oil
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon paprika

For the Greek Yogurt Chive Dip:

  • 1 cup plain Greek yogurt (285 g)
  • 1 tablespoon lemon juice
  • 2 tablespoons chives, finely chopped
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • Wash and peel the carrots. Cut them into thin, fry-shaped sticks of uniform size.
  • Toss the carrot sticks in a bowl with olive oil, paprika, salt, and pepper until evenly coated.
  • Spread the carrots on the baking sheet in a single layer, ensuring they don’t overlap.
  • Roast in the oven for 20–25 minutes, flipping halfway through, until tender and slightly caramelized.
  • Meanwhile, mix the Greek yogurt, lemon juice, chives, salt, and pepper in a bowl to prepare the dip.
  • Remove the carrot fries from the oven, sprinkle with fresh parsley, and serve hot with the dip.

Notes

  • For a smoky twist, substitute regular paprika with smoked paprika.
  • To make the dip vegan, use plain coconut yogurt and adjust the seasoning to taste.
  • For extra crunch, sprinkle breadcrumbs or grated Parmesan on the carrots before roasting.
