- 1 cup plain Greek yogurt (285 g)
- 1 tablespoon lemon juice
- 2 tablespoons chives, finely chopped
- ¼ teaspoon salt
- ¼ teaspoon pepper
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Wash and peel the carrots. Cut them into thin, fry-shaped sticks of uniform size.
- Toss the carrot sticks in a bowl with olive oil, paprika, salt, and pepper until evenly coated.
- Spread the carrots on the baking sheet in a single layer, ensuring they don’t overlap.
- Roast in the oven for 20–25 minutes, flipping halfway through, until tender and slightly caramelized.
- Meanwhile, mix the Greek yogurt, lemon juice, chives, salt, and pepper in a bowl to prepare the dip.
- Remove the carrot fries from the oven, sprinkle with fresh parsley, and serve hot with the dip.
Notes
- For a smoky twist, substitute regular paprika with smoked paprika.
- To make the dip vegan, use plain coconut yogurt and adjust the seasoning to taste.
- For extra crunch, sprinkle breadcrumbs or grated Parmesan on the carrots before roasting.
