Ingredients

• 1 cup of long-grain white rice
• 1 pound of ground beef
• 1 medium onion, diced
• 1 bell pepper, diced (green, red, or a mix)
• 2 celery stalks, diced
• 3 cloves of garlic, minced
• 2 teaspoons of Cajun seasoning (or more to taste)
• 1 cup of beef broth
• 2 tablespoons of vegetable oil (optional)
• Optional garnish: chopped parsley or green onions


Instructions

  • Cook the rice according to package instructions, using beef broth instead of water for added flavor. Fluff with a fork and set aside.
  • Heat a large skillet over medium-high heat. Add vegetable oil if needed, and brown the ground beef, breaking it up as it cooks. Cook until fully browned, about 5-7 minutes.
  • Stir in diced onion, bell pepper, and celery. Cook for about 5 minutes, or until the vegetables are soft and fragrant.
  • Add minced garlic and Cajun seasoning. Stir and cook for an additional minute to bloom the spices.
  • Mix in the cooked rice and pour in the beef broth. Stir well, reduce heat to low, cover, and let simmer for 10-15 minutes.
